Tortilla-less Taco Tuesday

I’ve eaten my share of tortillas (corn and flour) with the best of ’em, but if you’re looking for a fun way to observe taco Tuesday sans simple carbs, this is the way to go! 

Here’s the ingredients I used, but feel free to modify based on your taste: 

  • 4 sweet potatoes
  • 2T olive oil 
  • 1 cup cooked ground beef w/ taco seasoning
  • 1 cup black beans
  • 1/4 cup fresh salsa
  • 1/4 cup shredded pepper jack cheese
  • 1T cilantro 
  • Sliced jalapeño rings 
  • + anything else you like on tacos! 

Directions: preheat oven to 400 degrees. Wash and dry sweet potatoes. Rub them with olive oil and poke a few times with fork. Bake for 45min-1hr (depending on size if potatoes), flipping halfway through. Turn oven off and let potatoes rest inside the oven for 10-15 minutes (or longer). I’ve found that this rest period yields softer potato skins. Once cooked, slice and fill with your desired toppings. Enjoy your guilt free #tacotuesday
